Vegan Pantry Cookies

Prep time: approximately 20-30 minutes

Baking time: approximately 12-15 minutes

 

Before you begin cooking make sure to:

  • Pre heat your oven to 350 degrees

  • Prepare baking sheet with parchment paper

  • Get out mixing bowl and stand mixer

  • Get out your cookie scooper or large spoon

  • Get out a spatula

  • Don't forget your cooling rack

  • Remember these will expand once they are in the oven! They will come out nice and large!


^ Ingredients Needed


  • 1.5 cups vegan butter

  • 1.5 cups of granulated sugar

  • 1.5 cups of light brown sugar

  • 0.5 cup of applesauce

  • 1 tablespoon of vanilla extract

  • 3 cups of flour

  • 1 tablespoon of baking powder

  • 1 tablespoon of baking soda

  • 1 tablespoon of ground cinnamon

  • 1 teaspoon of salt

  • 3 cups of rolled oats

  • 3 cups of chocolate chips (use non dairy)

  • 1 cup chopped dried apricots

  • 1 cup chopped dried dates

  • 1.5 cups of chopped pretzels of your choice

  • 1 cup chopped nuts if desired! *we did not make ours with nuts*


^ Step 1

Place butter into a bowl with a stand mixer


^ Step 2

Then add in your sugars! Then mix till it's creamy!


^ Step 3

Next add in your applesauce and vanilla extract and mix till it's combined!


 

^ Step 4

For step 4, slowly add in the rest of the ingredients and mix till all is incorporated.


^ Step 5

Using a cookie scooper, scoop a generous amount onto a parchment lined baking sheet. Then put this tray into the oven to bake for 12-15 minutes until the edges are golden!! Once they are out of the oven, use a spatula to carefully transfer the cookies to a rack for them to cool down! Be careful because they will be soft, but will become crunchier once they cool off!!

Voila!! Good job now its time to eat your cookies!!


^ Final Product

WOW!! I, Taylor, adore these cookies!! Out of all the cookies I have ever eaten, these are 100% my favorite!! Once the cookies came out they were both crunchy and chewy. The edges were nice and crunchy while the inside of the cookie was soft and chewy!! There was an amazing combination of flavors and textures between the pretzels and oats and all the dried fruits!! You would never know these are vegan and contain no dairy, nuts, or eggs!! These cookies are to die for and I would 100% recommend these to you!!


I, Ashley can confidently say that these are by far my favorite cookies I have ever tasted. I find myself constantly eating one cookie after the next!! THEY ARE SO ADDICTING! And on top of everything, you don’t feel guilty after eating so many since they are vegan cookies!! I would give this recipe an A+++!
