This restaurant near Union Square comes from the team behind one of our favorite Vietnamese spots in New York, Bánh. It’s just as exciting as—if not a little sexier than—the original, with rich noodle soups and pork jowl seared on the robata grill, all in a room with dramatic spotlights and an open kitchen. We’ve so far only visited while they're in soft open mode, but the bread they’re making for bánh mì is considerably fluffy and crusty. It's worth a trip by itself and best enjoyed in its simplest form: schmeared with patê and topped with a tuft of pork floss.
